This hearty soup can be prepared as a traditional corn soup or as a bisque. Its robust flavors enhance a variety of meats and seafood.

Mam Papaul used fresh corn from the garden for this preparation, but canned works just as well.  For a garden fresh presentation, add chunks of corn on the cob.  True to the New Orleans tradition, this soup is made with a light brown roux.
