Sweet Potatoes

This long, tapered, tuberous root vegetable is not the same as a yam.  Startchy and sweet tasting, sweet potatoes have been cultivated in the South since the 16th century.  They are not only made into side dishes; they are also often used to make sweet potato casseroles and even sweet potato pies.
